Dan-dan noodle consists of chopped bits of the following: pork , duck meat , onions (fresh & fried), pickled cucumber , Jap saltwort. Topped with a soft-boiled egg . Spicy sauce to bind it all
Vinegar with dan-dan noodles . Changes the dimension of the bowl to spicy sour instead. Of the 3 infusions (chilli , orange , kelp), kelp tasted the most flavourful
Rice with leftover dan-dan noodles toppings. The noodles are usually finished up first. Ask for some rice (free) to mix with the leftover, soak up the sauce. Second round of enjoyment????????
The best practice of mixing the ingredients is using both spoon & chopsticks to scoop from the bottom 5 times. And then eat!????
There are only 2 noodle types offered: Dan Dan Noodles ($17.90+) & Japanese Dashi Noodle (from $15.90+, can add more meat & egg ).
Added spiciness . If dan-dan noodles is not fiery enough, u can request for more spice - including the numbing 'mala' ones (step 6 in instruction card)
The basic bowl $15.90 is served with chashu & duck meat slices. Pay more for egg or more meats. Dashi (kelp-based) soup base was light yet aromatic
A franchise outlet of Enishi in Kobe. That ramen shop in Japan received a Michelin Bib Gourmand in 2016
Chilli oil for ramen costs an extra $2. It's the 'mala' numbing style, aromatic but not beaded-with-sweat hot
Only 9 counter seats . Cannot make reservation , so queue outside
Chashu could do with more seasoning, more evenly cooked
Dan dan ramen was really good.
They only serve 100 meals a day.
The line is ridiculous during lunch time: 1200-1330. Be prepared to wait as long as thirty minutes! - KJ
Good white coffee, very nicely balanced. Only a single shot for the smaller cup so definitely go for the bigger cup. - Ting
Grilled cheese ramen on the seasonal menu is one big gooey goodness! I highly recommend it! - Yuan Chin
Soup improved from the last time I tried at coffeeshop. I loved the side dish 卤肉 AKA Lor Bak or braised pork #brothersramen #ThomtoriEats - Ian Thomtori
