Maya's atmosphere on a weekend night is unrivaled in Fishkill. Their food is a bit pricier than expected, but it's so good. If you're at the bar , look for the carnitas tacos .

Try a chimibana after your burrito or quesadilla : banana-flavored cheesecake wrapped in a tortilla , deep fried and drizzled with caramel , chocolate syrup and whipped cream .
