Axian: 压干之后的板豆腐,像大片的乳酪,质地比豆腐更加结实。店家会把它切成小砖块。要下锅炸时,进一步地切面包般,切成类似麻将牌大小方块。浸泡在油中的豆腐,经过温油慢炸之后,里头的水分渐被抽干,内部充满空气,呈现海绵状,豆腐上半身重量大于下半身,便出现仿佛是豆腐卜自行转身有趣动作。师傅说,会用慢火炸,炸至豆腐卜完全发育成型,才正式加大火势来炸,只见师傅不停地用笊篱翻动豆腐卜, 让它炸得金黄通透
Axian: 出炉的豆腐卜 粒粒金黄讨喜,表皮有点韧度,咬起来口感很好。不过,每一颗豆腐卜,不管它的外皮是完整或爆开,中间都一定是空的,仿佛有一种禅的意境,告诉我们如何身处逆境却依旧保有从容自在的心态,或许这也就是每一位豆腐卜师傅所必需具备的基本功底。酿豆卜是广西三宝之一,算是广西美食中极具代表性的一道菜,过年过节肯定少不了。而浓浓的韭菜香味,非豆腐卜不可的酿件组合,早已经成为广西人的一份乡愁滋味。
Axian: 文冬豆腐卜闻名已久,而文冬菜市场内便有一摊传承了4代人的豆腐卜 ,听说这摊豆腐卜经常出现一大清早就销售一空的情况,而我们抵达时虽然才早上10点,摊子上的豆腐卜 也真的所剩无几。陈师傅说,制作豆腐卜和豆腐的基本步骤大致相同,主要工序离不开“磨”、“滤”和“压”三个字。先是将豆磨成豆糊,隔渣过滤,然后把豆浆煮沸后添加凝固剂,接着把豆花舀到木框里压干水分。
