You should go Harleem (its 12 mins from amsterdam central by train ), see Molen de Adrian and listen its story, how do windmills work. Great experience.

It's a beautiful old mill . Really worth a visit!

De Adriaan was opened on May 19, 1779. The windmill is located on the river Spaarne, at the time on the outskirts of the city . The mill burned down April 23 1932 and the rebuilding finished April 2002

There is a souvenirs shop inside. The souvenirs are inexpensive .
