Nighthawks ($25). Rum - & vodka-based. Amaro liqueur softens the coffee flavoured cocktail . Delighted by the warm-cold contrast created by the coconut foam. Oh! there’s also a sprinkle of MSG somewhere
Binary Byzantine ($25). Mezcal-based negroni , inspired by the Mexican ‘mole ’ sauce. Smoky, chocolatey , sweet yet lightly savoury (from the salt). Recommended for negroni fans
While the ambience is emotionally inspired by Edward Hopper’s “Nighthawks” painting , the logo clearly shows a bird & a key, as well as the infamous door with four circular cut-outs
Greenhouse Brew ($25). Bloody Mary concoction . Base of vodka & mezcal , with grapefruit as the mixer. Enjoyed the bitter aftertaste. Spicy too!
Slippery Transistor ($25). Sweetish & aromatic drink. There’s peanut butter scotch , rum & Creme de Cassis. Served with a playful slice of peanut butter jelly toast
The menu is given in the form of an old-school matchbook, for you to take with you. Besides the QR code within, there’s also a mint . There are no matches ????
Gamma-ray Holiday. Refreshing gin-based drink. There’s bitter gourd juice , but u can’t quite taste it as it does the job of rounding up the pineapple & citrusy flavours
It’s easy to miss the speakeasy . There is no sign except for an indecipherable logo. Until customers walked in & out, we didn’t know the dark red door opened into a small drinking spot
Laguna Coil ($25). Glorified G&T. The blue comes from blue guava & absinthe . Besides gin , there’s rum & sochu. Not my favourite drink here
Zenith Arrival ($25) is a tequila & mezcal drink. The zing comes from green chilli , bell pepper & citrus mixer
Vieux Carre made by co-owner Peter Chua (IG:@slash284). A lot more refined than most the ones I’ve tested around Singapore
Naked & Famous. A classic drink powered by mezcal & Aperol . Sour to the tongue , smoky to the nose
Small space. Difficult for large groups. When full, waiting time can range 30-45mins. Leave your number, & staff can alert you when seats are freed up
Nebulous Bloom. Sour gin-based drink. But the surprise is in the colour. Shine a light and delight!
The burgundy-coloured door at the back of the cafe is the entrance to Night Hawk. Photo: Google Maps
Try spotting this sign, while walking past the corridor at night. It indicates the entrance ????
Vieux Carre. This is a rendition by Taco (Trisha) is sweeter than Peter’s, more diluted and less aromatic
Entertaining to sit by the bar counter & observe cocktails being created
The vieux carre was superbly made here. Silky & not overly sweet
Limited seating at the booth area at the back of the bar
Constantly busy, especially after dinner time
Savor the Future 2.0: Savoury vodka tipple
