The chef here worked for 17 years at Schwartz 's in Montreal. Don't order the smoked meat poutine though: smoked meat too finely chopped, which made it very hard to appreciate its texture and flavour.
Smoked meat on its own was tender & flavourful, with nice fatty bits; Poutine gravy quite mild tasting: alright in normal poutine , but with smoked meat poutine it led to a muddied flavour profile.
Smoked meat poutine was less than the sum of its parts. Smoked meat was a mess. Fries fresh & crispy ; cheese curds quite squeaky but smoked meat made it hard to appreciate their texture.
