They've got a bunch of great classes and workshops! Try hammered dulcimer with Carolyn. She's a fantastic teacher and lessons are a great deal! It's easier to get started than you'd think.
Try any of the instruments for yourself! Just take off your jacket if you're playing a guitar...buttons and zippers are scratchy!
Classes are great but the classrooms definitely aren't soundproof. Be prepared to hear other people playing instruments in other classrooms ...
