Coming from NYC, "fine dining " in other cities can often mean a waste of $$, but at ChoLon, fresh flavors, inventive recipes, & creative platings=a Denver standout. Shrimp spring roll was v memorable!
You will get excellent main dishes (Wagyu chow fun ) and my whiskey & dash dessert was also excellent. A positive surprise for Denver. You can taste the quality and the love they put in every dish.
The kaya toast was delicious & unique! Willing to make accommodations & recommendations for vegetarians . Great drinks. Bummed the soup dumplings weren't vegetarian (beef broth ). Overall a great dinner

Best food I have eaten in a long time. Crab roll sauce was amazing, would definitely get those over and over and over. Brussel sprouts were also amazing.

The soup dumplings are excellent, not the normal sort of soup dumplings , but tasty none the less.

Wow! Wonderful service and the best soup dumplings . We had a great time and were full with the dumplings , Brussels sprouts , and fried rice . All superb!
They did much better on round two. Some very nice cocktails and snacks at the bar . I'll be keeping any eye on them.

The kaya toast is the perfect way to enjoy an appetizer . The sauce's low density belies its richness.
Everything was delicious! Be sure to let the soup dumplings cool down, they are a burst of flavors!
We really enjoyed several small plates and sharing a large plate so that we had plenty of room for dessert !
Service is a bit slow at lunch , but the quality of the food more than makes up for it. Try the Pho .

The Brussel sprouts are amazing and even though they seated us 30 minutes after our reservation , the food and service was well worth the wait.
French Onion Soup Dumplings were out of this world.
Holy icecream , Batman...try the chocolate cake w/ salted peanut ice cream . We all wanted to take a gallon of the latter home. YUM.
