Kela Kochore, a Yirgacheffe Ethiopian bean, has a very light roast that makes lively fruit tones in the mouth of the cup (the V60 pour helps this too). Bitter fruit notes of mango and guava .

Today's cold brew was a single origin bean from Columbia. The flavor profile is highlighted by a smooth yet slightly bitter nutty medium body with notes of almond and olive oil . Pair with semi sweets.

Cold brew (22 hour brew) today was a mix of Guatemala (Finca Los Santos, Acatenango) and Mexico (Nuevo Paraiso, Chiapas) beans. Mild body with bright colorful accents in mouth. Mapel & blueberry tones

The cold brew matches beans of Guatemala Los Santos, Acatenango and Colombia Los Pomos, Antioquia. The cup is clean and has a nice body feel of smoky toasted coconut tones.
